Karla- good for you! I think PE is a great place to use technology- here are a few of my ideas:
1) Students can track their performance progress using spreadsheets- e.g. time to run a mile etc. This allows them to track their own progress over time- and gives you and opportunity to to showcase math and fitness
2) Heart Rate monitoring- there is relatively inexpensive probe ware connect to PCs and allow students to measure their heart rate during physical activity- another good opportunity for math/fitness- but this also allows you to help students understand cardiac fitness and physiology
3) nutrition and fitness blogs- students can write and reflect on their own goals for the quarter and then reflect on their achievements and challenges with you and peers. This is a great way to stay in touch with your students' goals and build on their writing skills.
